It depends on the mode you're in. I have a 300 and a 700, so the settings might be a little different. But the surefire way is to put in Aperture priority mode ("A" on the dial). This lets you set the aperture and the camera will figure out the shutter speed that will give you a good exposure (based on the exposure settings you've chosen.) The dial will change the aperture.
Manual ("M") mode lets you change both the shutter speed and the aperture, telling you what's going on with the exposure with the little arrow on the sliding scale. 0 means a perfect exposure, and 1 in either direction means a stop more, or less light.
